This is sort of difficult to answer. I don't think the time matters to me all that much. I either show up at 7:30, or I completely forget it's happening because I'm doing something else and before I know it's it's well after 8pm.
I certainly understand the forgetfulness! I'm rather amazed that I haven't forgotten one! But I've come close, there were a couple of times that I was runnin' to get it fired up!
For us on the East coast 10:30 isn't that late if you are really interested in our group. The 11:00 start would be ok with me because I'm a night owl . A change in my internet provider, family and a change in medication have kept me away the last few, but I will be back.
I for one really look forward to our long distance fellowship and the exchange of ideas.

I would keep it at 7:30. I think there will always be stragglers no matter the start time, especially with it being on a weekend day. For me, I pay a lot of attention to the actual time during the weekdays, mostly because schedules are tighter. On weekends, unless times tend to be "-ish", and it is very easy to lose track of time precisely because "-ish" mostly works on weekends.
I know that I personally can be in the middle of something, completely focused and suddenly my wife will ask "weren't you going to _____" ?
Yesterday was an anomaly for me where I was actually really aware of time all day, and had another zoom immediately before yours.
My personal yardstick is +/- 5 minutes of start time, or 10 if I'm really interested in the topic teaser. If I'm later than that, I'll catch the next one.
